I really enjoy cooking. I like the artistic part of it. Selecting a menu with foods that my family will enjoy, all the while balancing complimentary flavors and colors. It’s my daily challenge. But sometimes life is busy and I just want a simple, quick meal. And if I can find one without sacrificing quality and taste, even better! And these shrimp foil packets are a great answer to that.
Shrimp Florentine Pasta
Garlic, lemon, and butter. It doesn’t get much simpler than that. I eased up on the crushed red pepper for Ellie. I love these simple pasta dishes. Nice and light for summer too.

Shrimp Tacos
My friend has been posting a lot of recipes from the Pioneer Woman and they looked too good. So I’ve decided to step out of my Cooking Light comfort zone and give one a try. I found this to be a lot of chopping, but really good! The shrimp part was super easy.
