Honey-Orange Chicken w/ Roasted Beets

My mom clipped this recipe out of the newspaper for us. The photo doesn’t really do it justice. This was easy and had just a few simple ingredients. And so good that Aya turned into a ravenous dog while devouring it. I threw my leftover bones on her plate and backed out of the room avoiding eye contact.

RECIPES:

Honey-Orange Chicken with Roasted Beets

4 small beets
1 orange
1 clove of garlic
1/4 tsp pepper
1/4 tsp salt
4 chicken legs, skin removed  (I used thighs)
1 tbsp honey

Preheat oven to 425 degrees. Cut off both end of the beets and wrap each beet in foil. Grate 1 tsp orange zest, then cut the orange in half and squeeze it’s juice into a medium bowl. Add garlic, salt, and pepper. Add chicken legs and toss to coat. Place chicken and juice on wrapped baking sheet with beets. Roast 30 to 35 minutes until beets are tender enough to pierce with a fork and the chicken is cooked through. Brush chicken with honey and roast an additional 2 minutes. Let beets cool and peel off the skins. Cut beets into quarters and serve.

 

Pudding Cake!

I wanted to make a pudding cake. Something simple and something with pudding.

One box yellow cake mix, one package of vanilla pudding, and one tub of store bought chocolate frosting. Pretty simple. Pretty good.

But next time, I think I’d double or triple the amount of pudding in the middle layer so it’s nice and sloppy.

If you have a better way of making a pudding cake or a good recipe, I’d love to hear it. Cake and pudding are two things I that think belong together. Just sayin’.

 

Herbed Chicken Parmesan

I’ve come across chicken parmesan recipes a lot, but for some reason I always pass on them. But wanting to use up some leftover jar spaghetti sauce, I decided the time was right. And boy, I’m sure why I’ve been passing on it for so long. I forgot how good a good chicken parmesan can be! We both really likes this. The chicken was tender, moist, and very flavorful.With a side of mashed potatoes and green beans, you can’t go wrong.

Sweet and Saucy Pork Tenderloin

I saw this recipe on another blog site, A Busy Mom’s Slow Cooker Adventures. She seems to be the Queen of the slow cooker. I’m not against the slow cooker, but I often forget I have it, and that it can make my life easier at times. So when I saw this recipe that has three ingredients and I had them all on hand, I figured I could give it a try.

1 can of apple pie filling, 1/2 cup BBQ sauce, and a pork tenderloin. Throw it in a crockpot and walk away. Making a grilled cheese sandwich takes more prep than that!

This wasn’t our favorite recipe, but considering the low effort, it was perfect for a day I didn’t want to cook. Three ingredients  and no chopping. It doesn’t get any easier! It sure has me researching on how to use my slow cooker more often.

Beef Kefta Patties w/ Cucumber Salad

I’m no kefta expert, but considering this was a Cooking Light recipe, we really liked these. The beef was very flavorful with all of the spices and the yogurt sauce was good too. The cucumber salad was ridiculously easy and a great excuse to use my mandolin slicer.
