Chili w/ Chipotle and Chocolate

Chili w/ chipotle and chocolate, and a side salad. This is the second chili recipe of the month. This one had chocolate and you could really taste it which gave it a unique flavor. There wasn’t much prep involved either which helped.

Broiled Tilapia w/ Thai Cocount Curry

Broiled tilapia with Thai coconut curry, broccoli, and rice. Mine doesn’t look nearly as good as the photo from the website, but it still tasted good. It was a simple sauce to make but had a good rich flavor. I actually didn’t overcook the fish this time either. I give this high marks.

Hiyashi Chyuka

These are noodle packets similar to ramen noodles, but you serve them cold and not with a soup. You can add whatever you want to them, but this is how Aya has done it in the past. It  has sliced egg, tomato, cucumber, carrots, and crabmeat. There’s no cooking involved, just chopping.

Meatloaf and Quinoa Stuffed Squash

Meatloaf, quinoa stuffed squash, and green beans. The stuffed squash is a recipe, but I threw the meatloaf together to use up some ingredients. And for throwing it together, it turned out really moist and flavorful. I threw in a cube of pureed spinach and a 1/2 cup of very finely chopped carrots. I think that did it. The stuffed squashed was great

RECIPES:

Quinoa Stuffed Squash

Meatloaf

1.25 lbs ground beef
1 small onion chopped
1 egg
1/3 cup bread crumbs
1/2 cup finely chopped carrots
1 oz pureed spinach
salt and pepper
2 squirts ketch-up

Sauce: ketch-up and Worcester sauce

Mix all together, put in loaf pan, put sauce on top, and bake at 375 degrees for 30 to 45 minutes.

Autumn Cranberry Beef Stew

Autumn cranberry beef stew. This has Guinness beer and cranberry sauce in it. It sounded too good not to try, and for the most part, it was. I think it’ll be even better tomorrow. An added bonus was that it was really simple. As far as everyday meals go, I give it a 5 out of 5. But as far as beef stews go, I give it a 3.5 out 5. So far, this other beef stew I made is my favorite.
