Migas con salsa verde, and a side salad. I liked it because other than the chopping it was pretty easy and quick to make. Instead of roasting the red peppers in the oven, I just used a jar of roasted red peppers. Not bad eatin’.
Pastitsio, and a side salad. This was a quick simple tasty casserole. It tasted good but really could have used a vegetable. I think asparagus or broccoli would have been a good addition. It felt more like a weekend dish.
Chicken with olives, dates, and cinnamon, and a side salad. I picked this because it sounded weird. At least it did to me. But whoa, what an awesome blend of flavors. The sweet and savory combination made it a perfect fall meal. Just as yesterday was, this was an unexpected hit.
Warm white beans with roasted fennel, and a salad. Wow! I was not expecting this to be so good. I made it mainly out of curiosity. But what a great combination of texture and taste. After I made it I noticed it was was recommended as a side dish, but it was very filling as a main dish.
Butternut squash risotto, broccoli, and a salad. I feel like this is better as a side dish, but this was very good, and flavorful, and Ellie loved it! A win all the way around.
