Quinoa and parsley salad and watermelon gazpacho. If you don’t like sweet, you won’t like this meal. But watermelon in soup form? Wow! I was really expecting to not like this, but I had a lot of watermelon to use. I figured this was a good way to use it up and I was pleasantly surprised.
Chicken and peach quesadillas with honey lime sour cream, corn saute, re-fried beans, and a garden salad with avocado. It’s amazing how a little honey and lime in sour cream makes it seem so fancy. It’s subtle, but definitely a nice touch. I like the mix of fruit in things, especially in the summer.
Double-bean burritos, corn and summer vegetable saute, and a garden salad with avocado. The burritos were really awesome, especially for having no meat. And the corn thing, what a nice side dish instead of plain vegetables. I thought maybe it’d be better cold, but after eating it, I think it’d be better warm.
Peach and gorgonzola chicken pizza with a garden salad. Dang, this was really good. It’s a flavor explosion and I thought all those ingredients really harmonized. These types of pizzas always make for a cook quick meal.
Lemon chicken, peas with pancetta, mashed potatoes, and a garden salad. I overcooked the chicken just a little bit, but it had a great flavor. This was a nice alternative to regular plain peas. Easy too!
