Burgers with blue cheese mayo and sherry vidalia onions, and pasta salad. I love a good burger and this was pretty tasty! But considering they say the world is going to end tomorrow, I kind of wish we went out for dinner instead. Someplace nice, too. At least we went out for ice cream though.
Curried tofu with rice, and sauteed miso cucumber salad. I’ve never sauteed cucumbers before. I served it warm, but I think it’d be better cold. The tofu dish was good too, but I think I’d like it better with rice noodles instead. But we were out.
Creamy linguine with shrimp and vegetables, and a garden salad. You got the creamy from cream cheese on this one. I was expecting an overwhelming cream cheese taste, but to my surprise, it didn’t have one. This was an awesome.
Aya cooked a nice big batch of Japanese curry stew to warm us up on this wonderful cold rainy May day. You can cook this with beef, pork, or chicken, and add vegetables. Or just do it with all vegetables. She likes to use the remaining vegetables from the week. This batch included mushrooms, onions, potatoes, carrots, and asparagus. But anything goes really. It’s a great dish, especially on a cold rainy day. The curry sauce is from a Japanese mix available at Asian grocery stores.
RECIPES:
Japanese Curry Stew
1 lb beef, pork, or chicken (cubed)
3 medium onions chopped
2 medium potatoes cubed
1 medium carrot sliced
Lightly brown meat, add vegetables. Add 5 cups water and bring to boil. Cook over low to medium heat about 15 minutes. Remove from heat and add curry sauce to pot. Cook on low for about 10 minutes or until curry thickens. Serve over cooked rice.
Italian meatball burgers, pasta salad, and steamed asparagus. These burgers were awesome! I wish I had leftovers. When I look at this picture, it makes me want to eat it again.
