Beef tagine with butternut squash and a side of sauteed lemon garlic spinach, with beet, blood orange, kumquat, and quinoa salad.Â I bought the wrong squash and got butterCUP squash instead.Â I think it mainly influenced the texture.Â I did the salad because I love beets and have never cooked raw beets before.Â That was cool because after boiling and slicing the beets, my hands looked like I slaughtered a goat.Â Even though the salad was a weird combination of things, it was a tasty flavor punch.Â Just a little labor intensive.
