Vegetarian paella, and a garden salad. Paella is way better with all the non-vegetarian stuff in it, but this wasn’t bad. It made a lot, it was easy, and it was filling.
Summer vegetable frittata, squash and zucchini, and chicken sausage. Not my best over all meal or presentation, but the frittata turned out really good.
Quinoa and parsley salad and watermelon gazpacho. If you don’t like sweet, you won’t like this meal. But watermelon in soup form? Wow! I was really expecting to not like this, but I had a lot of watermelon to use. I figured this was a good way to use it up and I was pleasantly surprised.
Double-bean burritos, corn and summer vegetable saute, and a garden salad with avocado. The burritos were really awesome, especially for having no meat. And the corn thing, what a nice side dish instead of plain vegetables. I thought maybe it’d be better cold, but after eating it, I think it’d be better warm.
Pasta with asparagus and mushrooms, and a garden salad. I used penne pasta instead of pappardelle. I’m sure it didn’t make a difference. I’m a big fan on these simple pasta dishes.
