You may have known her as Baby Bunnee, Ellie knows her as Sister Bear, but we call her Chloe Miki (美希)(Her middle name means “beautiful hope” in Japanese).

Born at 12:09am, 7lbs 8oz, 19.75 inches long.

THE BUNNEE BUMP: WEEK 41

Dear Bunnee,

This is Daddy. You haven’t heard much from me yet. I haven’t been able to spend as much time with you like I did with your sister when she was in mama’s belly. We didn’t have the listening nights of Mozart, the Beatles, and Stevie Wonder like I wanted to. But you know what? It’s ok, because really soon (I mean really soon) we’re going to be spending so much time together. We are actually on our way to meet you! And pretty soon I’ll be rocking you in my arms while we listen to music on the “outside.” I’m so excited to have this experience and for you to have a birthday story that’s all your own. And so far it’s off to a good start!

STILL PAUSING…

Well, the due date has come and gone. And that feeling of “any day now” is starting to fade. We’vebeen trying to relish in our last days as a family of three and cherish the quiet before our house has a new born, but well, we are losing momentum. We’vebeen hanging on a moment too long. Where’s the plunger and the salad spoons? Let’s get this kid out!

Stuffed Pepper Soup and Turkey, Apple, and Swiss Melt

So many garden green peppers to use up! Easy recipe and great on a fall day. The turkey sandwich was a nice balance. We loved this meal!

RECIPES:

Turkey Apple and Swiss Melt

Stuffed Pepper Soup

1 c chopped onion
1/4 c celery
1 clove garlic, minced
2 c green pepper, chopped
1/2 lb  lean ground beef,
1 – 16oz can crushed tomatoes
1/2 c tomato juice (I use 4 oz tomato sauce)
1/4 c uncooked white rice
3 c water
1T chopped fresh parsley
2 t sugar (takes the tomato bitterness away)
1 t salt ( to taste )
1 t black pepper

Saute onion, celery, garlic and green pepper til tender but not brown. Stir beef into vegs, cook til beef is brown. Stir in rice.  Add tomatoes, juice, water, parsley, sugar salt and pepper. Cover and simmer 45 min or til rice is cooked. Adjust liquid as necessary.

I doubled the recipe and added more salt.  I also let it simmer for about 1 hr and 15 minutes.
