Best. Lasagna. Ever.

I was thinking that I’ve never made a regular lasagna from scratch before. I’ve done veggie lasagnas, a butternut squash lasagna, and a frozen store-bought lasagna, but never a straight up lasagna. So when my friend posted this recipe on Facebook with rave reviews, I just had to try it.

This is a Pioneer Woman recipe, and it really is called “The Best. Lasagna. Ever.” With a title like that, it had a lot to live up to. But with a mix of ground beef and breakfast sausage, and a whole pound of mozzarella in it, I figured it could.

And boy oh boy, this was the richest tasting lasagna I’ve ever had! The three cheeses, the breakfast sausage, the spices, it all worked. My first impression was that it was too rich. But I thought about it all evening and had another piece before bed and liked it more. And then I thought about it all morning, and afternoon. And now I can’t wait to have leftovers! To me, that’s a sign of a good recipe!

Tequila Lime Pork Sliders and Corn Soup w/ Crab

When I picked this slider recipe, I really had something different in my mind. I wasn’t expecting the BBQ sauce thing even though the recipe clearly states and has directions for making a BBQ sauce. I don’t know what I was thinking. However, these were really good pulled pork sandwiches, just not my favorite. The recipe did have you put cole slaw on top which I’ve never done before on a pulled pork, but I really liked.

So far my favorite is a blend. This meat and rub recipe from Cooking Light, and Neely’s sauce from the Food Network.

This was my first attempt at corn soup and I made one changes that I think drastically changed the flavor. I didn’t spend the $18 a pound on king crab and used imitation crab meat. So the flavor of the soup was a little flat and kind of boring. So this is probably worth another try, but my next corn soup endeavor will be a different recipe.

Turkey Burgers

Nothing beats a really good burger burger. But once in awhile a nice turkey burger hits the spot, and this was one of them. Between the chili powder and cumin in the meat, the melted cheddar cheese, and the grilled onions, this was pretty awesome.

Summer Grilled Vegetable Pizza

This was very simple! I didn’t really grill the vegetables though, I put them under the broiler instead. We don’t have a grill. Can you believe it? Anyway, I will definitely make this of something like this again once the veggies from my garden are ready to pick.

I didn’t eat this, but considering there was no leftovers when I got home, I’m assuming Ellie and Aya tore it up.

These were surprisingly easy and fairly quick too. They were really moist and had a great flavor, but I’d double the hoisin sauce glaze next time.The homemade pickles that go on top are a must.
