Braised pork tenderloin with lemon and sage, steamed asparagus, and mashed potatoes. This called for pork shoulder, but I used tenderloin which worked just fine. I’m discovering how the crockpot can be an awesome tool. I think I’m going to start using this a lot more in 2012. This lemon sage sauce would work great on chicken too!
Gyoza soup with rice. Aya gave me a break and made his simple tasty dish. Super easy, and super delish! It’s just chicken broth with onions, carrots, nappa cabbage, and some gyoza. All mixed together in a pot and cooked until the vegetables soften up a bit.
Slow roasted pulled pork sandwiches, sweet potato wedges, and steamed broccoli. Dang, this was really good! Super super tender. I did this in the slow cooker with a 3lb pork shoulder roast. When I went to shred the meat, it just fell apart it was so tender. I haven’t done anything like this before and was surprised at how easy it was. I liked all the flavors used in cooking the meat, however, I do admit the sauce they have you make wasn’t my favorite BBQ sauce. If you have your own recipe or a favorite BBQ sauce, I would suggest to put that on top instead.
Penna pasta with kale, bacon, and sun-dried tomatoes. I completely forgot to add the cheese at the end! Either way, this was still a decent pasta dish. The funky kale combined with the bacon (I used turkey bacon) and the sun-dried tomato worked really well. My noodles took longer to cook, so I accidentally overcooked the kale. It would have been better if the kale wasn’t as mushy. Super fast and super easy though.
This was meant for using left-over Thanksgiving turkey, which I fully intended on doing, but things got away from me. So I used regular chicken breast instead. Simple dish and really tasty. We used it as a main dish, but I felt like it wasn’t enough to run solo. I loved the dressing though.
