Welcome Home Beef Stroganoff

The “What’s Cooking” section is usually the recipes I cook, but while we are visiting Aya’s family in Japan, it’ll be more like the “What I’m Eating” section.  One of the main highlights of our trips to Japan is the wonderful food we get to eat either from Aya’s mom or from being out on the town.  I wonder if we’ll have anything moving on our plate this trip.  I’m so lucky to get a break from cooking while we are in here.

First up is beef stroganoff, and daicon salad with shredded dried fish flakes and dried seaweed.  Her mom’s beef stroganoff is awesome!  It’s been the homecoming meal for sometime now.  As soon as we get home from the airport, this is the meal Aya always requests.

 

Pork Tenderloin w/ Sauteed Apples

Pork tenderloin with sauteed apples, golden mashed potatoes, and steamed broccoli.  The pork turned out a little tough, but everything had a great flavor.  I love the combination of sweet and savory.

Butternut Squash Soup

Butternut squash soup, and a salad.  This was awesome!  And really easy.  Chop, cook, blend, and serve.  Most of the work was just waiting for it to cook.

Portobello and Poblano Tacos

Portobello and poblano tacos with pica de gallo, and left over tortilla meatball soup. I have to say, I really didn’t care too much for these. I didn’t really pick up the lime flavor in the pica de gallo, and I thought the jalapeno was over powering. The portobellos got lost in the mix because I couldn’t really taste them. I think these would be better without the pica de gallo and just be peppers, mushrooms, avocado and cheese.

Tortilla Meatball Soup

Tortilla meatball soup, and a salad.  I was originally going to make bean burritos to go with this, but I started a kitchen fire when using the broiler to brown the tortilla strips.  So I figured that was a good place to stop.

This soup was really good and had good spicy flavor.  I’m not big on food that’s really spicy, but this just had enough.  This was not like your average tortilla and chicken soup.  Much different than that.
