Cookies!

We received cookies in the mail from our friend today!  Some of the best cookies we’ve ever had too!  They showed up in this pretty little box with a bow, which did not deter me from devouring two or three cookies just before dinner time.  Thanks Anna for the cookies, we love them!

Jambalaya

Jambalaya, creamed cucumbers, and a salad.  I know it’s just a Cooking Light version of the jambalaya, but I still like it!  I use turkey sausage, and I double the amount of sausage and shrimp.  And I added more rice, about a half cup more.  I’m excited for the leftovers already.

Linguine w/ Lemon Ricotta

Linguine with quick lemon ricotta and a salad.  Making homemade ricotta in the microwave was kind of weird.  This was a simple dish to make, but it didn’t taste spectacular.  It was a little bland and the texture of the homemade ricotta was a bit odd with everything else.

Noodles

This was one of the cold Asian noodle dishes.  It’s a packet of noodles you cook, then chill, and add a sauce.  The fixings you put on top you can change.  Aya made this and used yellow peppers, turkey lunch meat, egg, corn, and tomatoes.  This is always one of my favorites.

 

Tilapia Tacos w/ Grilled Peppers

Sauteed tilapia tacos with grilled peppers and onions, creamed cucumbers, and a garden salad.  This was just okay.  It was quick and easy, but it didn’t pack the flavor punch I was expecting. The cucumbers were awesome because they were from my mom’s garden, had garden dill, and I used my mandolin slicer for the first time too.  It’s an easy summer side dish.

Creamed Cucumbers

Sliced cucumbers, enough sour cream to coat them, a little salt and pepper, and a little fresh dill.  Mix and let set in the fridge for a bit.
