BBQ chicken and blue cheese pizza, and a garden salad. Dang! This is the best pizza recipe I’ve made yet! I’m not even super crazy about blue cheese. It says it serves 6, but that’s a joke. Three at best. Maybe we are just big eaters?
Angelina’s Mexican Restaurant. I had the combination plate which meant a tortilla with meat cheese and vegetables in every form available. Burritos, tostados, tacos, enchiladas, etc. And then the show stopper; fried ice cream for dessert. Which was awesome!
Herbed shrimp and white bean salad, and corn bread muffins. It’s amazing this turned out even halfway good. I didn’t read the recipe other than glance over the ingredients. I forgot some key ingredients and did things in the wrong order. But it was still really really good. I bet it’s even better if you actually read the directions. The corn bread muffins seem random. I was really wanting something junkfood-ish earlier today, and that was the best we had on-hand. Smother them in enough butter and it’ll do the job.
Spaghetti and a garden salad with strawberries, goat cheese, and dill. This was just plain boring spaghetti sauce out of a can with a little added beef. But you know what? It was pretty darn good.

Spring vegetable couscous with chicken, and a garden salad. I’ve been meaning to make this for five weeks and I finally did it today. It called for asparagus but I used broccoli instead. I didn’t use the rotisserie chicken like it called for either, I just cooked a chicken breast in chicken broth first. This was simple and had a refreshing flavor.
