This cold Japanese noodle dish that I don’t know the name of, and a salad. We have these packets Aya’s mom sends. They are really easy to use. Just boil the noodles, add the sauce on top, and then slice up some meat and vegetables and you’re good to go. I used imitation crab meat, egg, cucumbers, and tomatoes. You can put ham and shrimp on there too. Aya introduced these to me when we were in college. It’s been a favorite ever since.
Cornmeal crusted catfish, steamed asparagus, and a garden salad. I thought that this might be bland and dry, but I was wrong. This turned out really good and it was really easy.
Spinach, caramelized onion, and bacon pizza and a garden salad. I think this had too many onions for me to be crazy excited about it. I didn’t make my own crust like the recipe called for. I think it looked better than it tasted.
Chicken and summer vegetable tostadas and leftover chili. This was from the superfast chicken recipe section. It was, and it sure was tasty. And the more I think about it, that turkey chili is in my top three favorite chili recipe list.
Black bean burgers with mango salsa, white bean turkey chili, and a garden salad. I’m not big on veggie burgers, but when I made these last summer, I was all about them. They’re no burger substitute, but they definitely stand on their own. I’ve been doing vegetarian chilis for awhile, so I thought I’d give this turkey chili a try instead. Very good! I give it high marks.
