Roasted vegetable pizza and a garden salad. It’s true, I made a pizza with no apples or chickens being involved. I used a pre-baked crust, such as Boboli, making this pretty quick. Great flavor, too!
Shrimp, asparagus, and penne pasta, with a garden salad. This would have been great. Until I accidentally added “chili ready diced tomatoes” instead of a regular can of diced tomatoes. This dish did not need chili spices. Oops.
Broiled tilapia with a veracruz sauce, steamed green beans, and homemade mashed potatoes. This is one of my favorites! This veracruz sauce comes from Dinah Shore’s Cookbook. My neighbor gave this book to me as a Christmas gift last year. It’s out of print now, so he got me a used edition. Once he found out it was actually signed by Dinah Shore herself, he took it back and gave me a different copy. Considering Dinah is one of his top three favorite singers of all time, I didn’t mind. It’s a great book with great recipes. If you see a random copy anywhere, I suggest you pick one up, and check if it’s autographed.

Tilapia with Veracruz Sauce
Salt and pepper tilapia, squirt with lemon juice, broil on top rack for two minutes on each side or until done.
Combine ingredients in medium sauce pan and cook for about 15 minutes. Let simmer until it turns a little saucy. Mix cooked fish dripping with sauce and then serve on top of fish.
Belgian waffles with a buttered banana topping, turkey bacon and sausage, and coffee. One word; butter. Aya had her choice between pancakes and waffles. She made the right decision.
Pasta puttanesca and a garden salad. Easy easy easy. But if you don’t like olives, this isn’t for you. This was a very strong flavored dish. The fact it was so quick and so easy gives it extra points.
