Broiled tilapia with a veracruz sauce, steamed green beans, and homemade mashed potatoes.Â This is one of my favorites!Â This veracruz sauce comes from Dinah Shore’s Cookbook.Â My neighbor gave this book to me as a Christmas gift last year.Â It’s out of print now, so he got me a used edition.Â Once he found out it was actually signed by Dinah Shore herself, he took it back and gave me a different copy.Â Considering Dinah is one of his top three favorite singers of all time, I didn’t mind.Â It’s a great book with great recipes.Â If you see a random copy anywhere, I suggest you pick one up, and check if it’s autographed.
Tilapia with Veracruz Sauce
Salt and pepper tilapia, squirt with lemon juice, broil on top rack for two minutes on each side or until done.
Veracruz sauce: (I always double everything)
1 tsp olive oil
1 tsp chopped scallions
1 large shallot finely chopped
1 Tbp finely chopped celery
1 Tbp green pepper finely chopped
1 tomato finely chopped
1 tsp salsa
3 mushrooms finely chopped
1/2 tsp salt
Combine ingredients in medium sauce pan and cook for about 15 minutes.Â Let simmer until it turns a little saucy.Â Mix cooked fish dripping with sauce and then serve on top of fish.
