Spaghetti & Meatballs

“On top of spaghetti
all covered with cheese
I lost my poor meatball
When somebody sneezed”

Spaghetti and meatballs with a garden salad.  I needed to use up some ground beef and some jar pasta sauce.  And I wanted to do something simple and easy.  I got the meatball recipe from my friend Haniyyah which you could hardly call a recipe.  The instructions were basically, “a little bit of this, and little bit of that, teaspoon, tablespoon, it doesn’t matter.”

RECIPES:

Meatballs (my interpretation)

Ingredients
1lb beef
1/2 tsp salt
1/2 tsp black pepper
2 tsp italian seasoning
4 Tbp bread crumbs
4 Tbp shredded parmesean cheese
2 tsp crushed red pepper (I only did 1/2 and that was plenty hot for me)
2 tsp minced garlic

Mix meat, roll into meatballs, add a little water in the bottom of the dish, cover and bake at 350 degrees for 45 minutes.

Japanese White Stew

A popular Japanese dish called “white stew” which is basically a chicken and vegetable stew with a cream sauce, brown rice, and a salad with goat cheese and dried pomegranate seeds.  I got a break from cooking today when Aya whipped up this tasty dish.  It worked out great because it used up all the leftover vegetables from the week.

Brunch

We had brunch at our friend Amy’s place in downtown Detroit.  We had eggs with baby bella mushrooms, green onions, and spinach, turkey bacon, tamales, fruit salad, and homemade scones with homemade jam.  I made the scones this morning, and Amy did the rest.  The tamales were from Honeybee Market in Detroit.  I love brunch.  Anything can be considered brunch food.  Cold pizza, tamales, jam, whatever.

Turkey Burgers w Proscuitto & Cantalope

Turkey burgers with proscuitto and cantalope, spicey sweet potato wedges with a mayonnaise honey sauce, sauteed spinach, and a garden salad.  Cantalope!?  On a burger?  It sounds weird, but it tastes surprisingly good.  It has a similar texture as a tomato and is just a little bit sweeter, so it really wasn’t as weird as I was expecting.  I really should have bought bigger buns though.

Pizza!

Pizza and cheesy bread from JJs Pizza!  As soon as I heard snowstorm, I started craving pizza.  Since the snow started falling, it was my mission to end today with a big sloppy cheesy mess.  We rarely get pizza, but Aya had a snow day today.  What a perfect excuse.  I even splurged and went with JJs instead of the cheaper Hot-N-Ready.  JJs makes my favorite pizza.  The sauce has just a hint of sweet in it, and the dough has a little extra something I can’t quite put my finger on.  But it’s awesome.  I think they put a chemical in it that prevents your stomach from telling your brain that you are full, because I can just eat and eat this stuff.  But after eating myself into a coma, I think I’m ready for winter to be over.
