“On top of spaghetti
all covered with cheese
I lost my poor meatball
When somebody sneezed”

Spaghetti and meatballs with a garden salad.  I needed to use up some ground beef and some jar pasta sauce.  And I wanted to do something simple and easy.  I got the meatball recipe from my friend Haniyyah which you could hardly call a recipe.  The instructions were basically, “a little bit of this, and little bit of that, teaspoon, tablespoon, it doesn’t matter.”

Meatballs (my interpretation)

1lb beef
1/2 tsp salt
1/2 tsp black pepper
2 tsp italian seasoning
4 Tbp bread crumbs
4 Tbp shredded parmesean cheese
2 tsp crushed red pepper (I only did 1/2 and that was plenty hot for me)
2 tsp minced garlic

Mix meat, roll into meatballs, add a little water in the bottom of the dish, cover and bake at 350 degrees for 45 minutes.

  1. First of all! there is too a recipe….its just a lil bit more free-flowing and not super exact….second! you’re supposed to coat the meatballs in olive oil before baking them, Mr. Cooking Light…..or if you’re feeling dangerous, they can be shallow pan-fried….enjoy!
