Pork tenderloin with sauteed apples, golden mashed potatoes, and steamed broccoli. The pork turned out a little tough, but everything had a great flavor. I love the combination of sweet and savory.
Spinach, caramelized onion, and bacon pizza and a garden salad. I think this had too many onions for me to be crazy excited about it. I didn’t make my own crust like the recipe called for. I think it looked better than it tasted.
Chipotle pork tacos, three-bean vegetarian chili, and a garden salad. The tacos had a really good flavor and were very quick and easy to throw together. The chili was fantastic though. Not only great for a vegetarian chili, but just as a chili. If I had a rating system in place I would give this chili a top rating. It’s not my favorite chili though. My mom’s chili holds the crown for best chili.

Pork tenderloin with red and yellow peppers, sauteed spinach with raisins and pine nuts, and a salad with goat cheese, pomegranate seeds, and walnuts. This was quick and easy and would probably be just as good with chicken.
