Double-bean burritos, corn and summer vegetable saute, and a garden salad with avocado. The burritos were really awesome, especially for having no meat. And the corn thing, what a nice side dish instead of plain vegetables. I thought maybe it’d be better cold, but after eating it, I think it’d be better warm.
Easter dinner at my folks house is always a feast. We only eat these things once or twice a year, so it’s always a great treat. Today’s dinner consisted of smoked and fresh kielbasa, pierogis, ham, carrots, cole slaw, Polish sauerkraut, deviled eggs, homemade honey wheat bread, homemade challah bread, and a sponge cake with orange curd for dessert. My brother made the carrots, and I made the cake. My mom handled the rest. That’s good eatin’. For those that celebrate, hope you all had a great Easter.
Turkey burgers with proscuitto and cantalope, spicey sweet potato wedges with a mayonnaise honey sauce, sauteed spinach, and a garden salad. Cantalope!? On a burger? It sounds weird, but it tastes surprisingly good. It has a similar texture as a tomato and is just a little bit sweeter, so it really wasn’t as weird as I was expecting. I really should have bought bigger buns though.
Pork tenderloin with red and yellow peppers, sauteed spinach with raisins and pine nuts, and a salad with goat cheese, pomegranate seeds, and walnuts. This was quick and easy and would probably be just as good with chicken.
