LIFE WITH TWO: THE FIRST DAY BACK

IMG_8630 editWe were very fortunate that Aya and I were both home for the full three months of Aya’s maternity leave. Aya’s mom was also in town for the first month Chloe was born, so we were not short of helping hands. It was great to be able to fully enjoy and take in our new dynamic as a family of four together, but the day Aya was to return to work was fast approaching.

Her first day back to work was the Wednesday before Thanksgiving. She had the following week off after that. So between that and the Holiday, her first “real” day back to work wasn’t until the first Monday of December. This was good because it gave us both a taste of what was to come without having to dive in full force. But it also made us a little lazy. Maybe more than a little.

Chicken Enchildas

2013_02_06This had a lot of steps, but it didn’t seem like that much work. There are probably ways you could do it quicker and easier, but I followed the directions as written. We really liked this one, however, it doesn’t reheat the best. It was really dry on the second day. I served it cilantro lime rice, and a salad.

2013_02_01Wow! I wasn’t expecting much, but these turned out great! I just used canned crab meat, but there were still good. Lightly crispy on the outside, nice and flavor on the inside. I served it with some corn chowder soup and a salad. Ellie loved these too. Always a plus.

BAD DREAMS

DS_2013_02_01aI’m no stranger to crazy dreams. I once had a dream with flying vampire pigs that ate my brother that was so realistic, I Googled “flying vampire pigs” in the morning to see if they actually existed. I thought for sure they were from some old Transylvanian folk lore that my subconscious somehow picked up on. But I remember feeling disappointed when my search results came up null. “It was so real,” I thought to myself.

It’s amazing how our minds can make something ridiculous into something so frightening. Flying vampire pigs sounds so laughable, but in my dream they sure weren’t and they were as real as you or I.

Now that Ellie has started to have bad dreams, it’s even more amazing to see what her mind turns into scary things.
