Chicken Marbella

I just learned that dried plums and prunes are the same thing. I never knew! Dried plums sound way cooler than prunes. But anyway, dried plums, green olives, and capers combined together prove to be a flavor explosion. The reviews were divided on this. Aya really liked it, but I still haven’t decided yet. I’m leaning towards, not-so-much, however I’m not sure I made it correctly.

It calls for four chickens and I just used four chicken breasts. And I didn’t use as much brown sugar as suggested, so that may be part of it too. I think it’s worth another whirl to if something went wrong.

I served it over angel hair pasta which I liked, but Aya suggested rice or orzo. We’ll see what happens next time.

Shrimp Tacos

My friend has been posting a lot of recipes from the Pioneer Woman and they looked too good. So I’ve decided to step out of my Cooking Light comfort zone and give one a try. I found this to be a lot of chopping, but really good! The shrimp part was super easy.

Pineapple Teriyaki Salmon

I was recently featured in a cooking column story for our local Patch site. I wasn’t sure what to make but decided I should do like I normally do and pick something I’ve never made before. But I also didn’t want something labor intensive, and something with a short cooking time. When scouring my title go-to website, Cookinglight.com, I came across this recipe and thought it’d be perfect.

We loved it, and Ellie loved it! She thought it was chicken though. Oh well. I should have let the sauce simmer longer to become thicker to be a glaze, but I decided to keep it thinner. While in the oven the fish soaked up all the flavor and was very moisture and had a perfect texture. I would definitely make this if we had guests over.

Quick and easy! AND Aya loved them so much she licked the bones clean. Simple ingredients and big flavor. The chicken was moist and flavorful. I Really loved this recipe.

Turkey Meatloaf

This turkey meat loaf was very moist and very flavorful. Nothing exotic or unique about it, just really good flavor. We all gobbled it up. Nothing tricky about the recipe either.
