Creamy Spring Pasta

This pasta dish gets most of it’s creaminess from cream cheese. It’s not a strong cream cheese flavor, but you can taste it. So if you don’t like cream cheese, this might not be the recipe for you. I really like the how it was creamy, but lighter. I did miss the crunch though because I forgot to top it with the golden bread crumbs I made that the recipe called for. Maybe for the leftovers.

Sausage, Tomato, and Arugula Pizza

The original recipe calls for bacon, but  I replaced it with chicken Italian sausage. I also used real sauteed mushrooms instead of ones from the jar like suggested. I wasn’t home to eat this, but my mom , Aya, and Ellie seemed to really enjoy it.

Crispy Herbed Tilapia Sandwich w/ Chive Aioli

Same recipe as the breaded shrimp from a few days ago. I just used tilapia instead and threw it on some bread. It was good idea too! We both loved this!

Crispy Herbed Shrimp w/ Chive Aioli

Crispy herbed shrimp with chive aioli, steamed asparagus, and mashed potatoes. I did all the prep while Ellie was sleeping so it went smoothly. I’m not the most comfortable breading and frying things, but this turned out good. I ran out of breading material though, so I would add more bread crumbs. I used dried spices, but I imagine using fresh as the recipe calls would make this taste better too.  The chive aioli was great! This would be great on a fish sandwich or something like that too.

Mushroom and Manchego Panini

Instead of using fancy mushrooms, I only used regular and baby bella mushrooms. And instead of Manchego cheese, I used muenster. Other than that, I followed the directions. I wasn’t expecting much, but wow, this was awesome! And very filling too!
