Asian-Style Meatloaf

Asian-style meatloaf, stir-fried broccoli, and white rice.  This was a really cool take on meatloaf.  Maybe a hint on the salty side, but really good flavor!

Buffalo chicken stripes, mashed potatoes, green beans, and leftover mac n cheese.  The recipe called for thighs, but I just used chicken breasts.  Not fancy, but not a bad meal.

Homemade Mac N Cheese

Homemade mac n cheese with a salad.  The recipe said it was the “creamiest.”  It wasn’t, but considering it was a lighter version that had butternut squash in it, it was really good.  I would bake it five minutes less than what was suggested.

Greek Lamb Burgers w/ Shrimp Orzo Salad

Greek lamb burgers, shrimp orzo salad, and a side salad.  This was my first time cooking lamb, but not my first time eating it.  I’m a fan!  This was a good recipe, and the tzaziki sauce was great too!  The orzo salad, I think I may have made wrong and put too much mustard in.  Other than that it was pretty tasty.

Greek Lamb Burgers

Shrimp Orzo Salad

3/4 lb orzo
1 pint grape tomatoes
I cucumber cubed
16 shrimp
Feta cheese
1/4 c dill chopped
1/4 c white wine vinegar
3 Tbp dijon mustard (I’d do only one)
1/2 c olive oil

Cook orzo set aside. Add dill, mustard, and vinegar to blender. With blender still running, slowly add olive oil until fully mixed. Add tomatoes and cucumbers to orzo, add dressing.  Cook shrimp with a little olive oil and salt and pepper.  Add to orzo.  Fold in feta cheese.  I like this served cold.

Three Cheese Ravioli

Three cheese ravioli with homemade pesto, and a salad with fresh mozzarella and garden tomatoes.  I went to make this recipe from Cooking Light, but I did something easier.  I had frozen ravioli, and Aya had made a batch of pesto and had a few servings in the freezer. I just boiled the ravioli, defrosted the pesto, mixed, and added some chopped tomatoes.  This was the fastest dinner ever.

This is what I intended to make.  Their version of pesto is much lighter and has less oil than Aya’s.  But hers is so good and was already made.
