Pesto Lasagna w/ Spinach and Mushrooms

Pesto lasagna with spinach and mushrooms, and a garden salad.  All made in the crockpot.  It looks awful, but tasted very good.  I recommend using frozen chopped organic spinach instead of fresh, it’s just easier that way.  It calls for fancy mushrooms, but I think regular ones will do.

Tater-tot Casserole

Tater-tot casserole and a garden salad.  So with my house being torn up, I’ve been looking for quick easy recipes that’ll last a few days.  Last week’s slow cooker recipes were good, but not that quick on the prep time.  So this week I’m trying casseroles.  I got this tasty recipe from a friend.  Aya said it “tastes like America.”  It was good except I made a very rookie mistake.  I mixed all the ingredients and then though something seemed off.  I reread her recipe and at the bottom it said, “make sure you brown the meat first.”  Oh.  Ooops.  So we had soggy, greasy, pile of mush tater-tot casserole.  It was easy though!

RECIPES:

1 lb browned ground beef
2 cans cream of mushroom soup
2 cans green beans
1 can of corn
1 can French’s onions
6 oz shredded cheddar cheese
Frozen tater-tots

Brown meat first, then mix all ingredients through onions. Put tater tots on top, sprinkle with cheese and then bake at 350 for 1 hour.

 

Shrimp w/ Celery and Spicy Mayo

I got another break from cooking today.  Aya made one of her regulars today.  Shrimp and celery with spicy mayo, seaweed salad, rice, and miso soup.  This has been in her regular rotation for sometime now and she doesn’t remember where she got the recipe so she does it all from memory.  It’s simple and familiar, and always hits the spot.

RECIPE:

1lb frozen precooked shrimp
1 celery stalk sliced
sliced carrots
sliced asparagus
two spoonfuls of miracle whip
Toban Jan (Chinese red chili miso – found at Asian grocery store)

Sautee garlic with toban jan, add vegetables and cook for a few minutes. Add shrimp until thoroughly heated. Add two spoonfuls of miracle whip and mix. Serve with rice.

Corn

I call this a lazy man’s dinner.  Corn on the cobb, and a cobb-ish type salad.  It’s kinda hard to mess up, is really fast, and tastes pretty good.  Nothing much else to say.

Spicy Chicken Stew

Aya planned all the meals and went grocery shopping for me this week since I was tearing our house apart.  I requested easy slow cooker recipes to make my job a little easier.  Yesterday’s  beef stroganoff went so easy I forgot to take a picture.  And now it’s all gone.  But today was spicy chicken stew and a garden salad.  It wasn’t that spicy, I forgot the corn, and my picture looks way different.  But I really liked it.
