Turkey Burgers

Turkey burgers, steamed asparagus, left over vegetarian chili, and a garden salad.  Nothing special here, just a plain simple turkey burger.  Yes, I realize this recipe is from Elle magazine.  I wasn’t reading it, it’s Aya’s.  I was just looking at the pictures.  And the picture of the turkey burgers made them look pretty good.

Jane’s Vegetarian Chili

Vegetarian Chili

Jane’s vegetarian chili, poblano, mango, and black bean quesadillas, and a garden salad.  I have no idea who Jane is, but she makes a pretty good chili.  For being a meatless chili it has a lot of flavor and a good texture.  I think the two tablespoons of sugar add a little something special.

Chicken Sausage, Sweet Onion, & Fennel Pizza

Chicken sausage, sweet onion, and fennel pizza, with a winter orange salad.  My brother and sister-in-law highly recommended this pizza recipe.  It has fennel in it, and I HATE fennel.  I hate that black licorice flavor, it’s just awful.  But my brother assured me that it didn’t have that flavor, so I decided to try it.  He was right and because of this, it has opened my mind to trying some other recipes with fennel.  The pizza was not your typical pizza, but was a good mix of distinguished flavors.

Lemony Chicken Saltimbocca

Lemony chicken saltimbocca, couscous with portobello mushrooms, steamed asparagus, and a garden salad with feta and beets.  Pucker up buttercup!  When they say “lemony,” they mean it.  Great flavor, but go easy on the sauce.  It’s very lemony, and very potent.

Portobello, Red Pepper, & Goat Cheese Sanwiches

Grilled portobello, red pepper, and goat cheese sandwich, with leftover beet porscht soup, and a fresh garden salad.  The first time I made this I splurged and bought the foccacia bread.  This time I cheaped out and used regular bread.  It’s totally worth it getting the fancy bread.  The red peppers I used were from a jar, so it was really quick and easy to through this together.
