Panko Crusted Tilapia and Curried Quinoa Mango Salad

2013_04_11It’s been busy around here lately, and fish always seems to be a quick good meal. I’m not really good at cooking breaded things. Not sure if it’s my pan, or my technique, but the breaded never seems to stick no matter what I do. But despite my breading challenges, we all really liked this dish. Light, simple, and good flavor.

The quinoa salad was really good too. I like quinoa in hot dishes, but I think I prefer them in a cold salad form. I really loved the flavors in this one.

Red Curry Quinoa and Carrot Apple Ginger Soup

2013_03_28aWe’ve been sticking with the Asian inspired foods this week. We went out for Thai on Monday, had tofu sandwiches with ginger peanut sauce and soup Tuesday, and now this tasty red curry quinoa. This definitely doesn’t replace your more traditional Thai vegetable red curry dish with rice dish, but it’s a great way to eat quinoa. I’m learning quinoa is very versatile. This recipe serves two to three and I think that’s spot on. We devoured this and Aya had to stop herself so she could have leftovers for lunch.

Super easy and super fast, both a plus today.

The soup was leftover from the other day and complimented this really well.

Rounding out the theme for this weeks meals, I found a nice Japanese recipe for tomorrow. I’m looking forward to that one.

Oven-Baked Mexican Quinoa Casserole

2013_03_18This was really flavorful, and really easy too! My major mistake was mixing in the spinach before the oven instead of after.

If your family is iffy on quinoa, I’d suggest trying this. This had tons of good familiar flavors. This was really filling, but we still didn’t couldn’t stop eating it.

Quinoa Spinach Mac and Cheese

2013_03_06aWhatever dairy we didn’t consume last week during vegan week, we are definitely making up for it now. Whoa. One and a half cups whole milk, 8 ounces cheese, and 5 tablespoons of butter. Yikes, this was creamy.

This was really really good, but it honestly didn’t remind me of mac and cheese. It reminded me more of a rice casserole dish. You could throw anything in this and it’d taste great. Spinach, broccoli, cauliflower, chicken, whatever.

Also, if you’ve been wanting to try or introduce quinoa to your family but are worried they won’t like it, or will reject it. This would be a great intro. Just about anything is good covered in melted cheese.

I served this with a salad and turkey bacon sandwiches. Aya gave it a thumbs up. Ellie strangely wasn’t into it though. She picked out and ate the spinach, which she normally rejects.

Vegan Quinoa Sweet Potato Chili

2013_02_26bAs far as chilis go, this was not my favorite. However, not comparing it to chili and judging it on its own, this was really good. We all really liked it. Between the sweet potatoes, beans, and quinoa it was very filling and rich with flavor. The quinoa texture balanced the mushiness of the sweet potatoes and the avocado on top really made it sing. I paired it with a salad with pecans and strawberries. Not bad eating. Now for dessert. Vegan cupcakes!
