Butternut squash, caramelized onions, and spinach lasagna, with a side salad. Okay, this was a lot of work. This required a lot of pans and a lot of clean-up, however, this was very tasty. It called for fontina cheese which I couldn’t find so I just substituted it with mozzarella (oh the humanity!). I don’t know what fontina cheese is, but my Google search told me there is no substitute. I’m sure people with a more sophisticated palette than mine would turn up their nose at such a substitution. I did like how there was a lot of cream sauce keeping it from getting too dry. This was a lot of work, but I have a lot of leftovers, which is always a good thing.
Leftover turkey soup and grilled cheese with pumpkin puree. The main reason I tried this recipe was because I had so much leftover pumpkin puree from the pies I made over the holiday. I used some with french toast in the morning and when I remembered we had the cookbook Deceptively Delicious by Jessica Seinfeld, I decided to try this. It was easy and really not that bad. I do prefer a regular grilled cheese, but this was a good way to use up some pumpkin puree.

Grilled Cheese with Pumpkin
1/2 cup pumpkin puree
1/2 cup shredded cheddar cheese
Mix and spread on the bread and grill like normal. It calls for butter and salt in the mixture too, but I left it out.

Portobello and poblano tacos with pica de gallo, and left over tortilla meatball soup. I have to say, I really didn’t care too much for these. I didn’t really pick up the lime flavor in the pica de gallo, and I thought the jalapeno was over powering. The portobellos got lost in the mix because I couldn’t really taste them. I think these would be better without the pica de gallo and just be peppers, mushrooms, avocado and cheese.
Warm white beans with roasted fennel, and a salad. Wow! I was not expecting this to be so good. I made it mainly out of curiosity. But what a great combination of texture and taste. After I made it I noticed it was was recommended as a side dish, but it was very filling as a main dish.
