WALKING ON SUNSHINE

I was really disappointed about missing a nice sunshine walk this week.  I knew this warmer weather wasn’t going to last.  The cold was coming back, and it was coming quickly.  It was bright and sunny this morning, but I heard the temperature was falling and the wind was going to pick up.  Figuring this was my only chance for a walk until who knows when, I decided to go for it.  Maybe we’d get stuck in the cold wind, but maybe we’d make it back in time.  It was a risk worth taking. HERE COMES THE SUN

It’s amazing what the sun and a little warmth can do to someone.  I’ve been so excited for a little warmth and some sun for a long time now.  We’vehad sunny days this winter, but they were on days when the high was 9.  But yesterday it was sunny AND warm!  Everybody was in a good mood and smiling.  Ellie was even so energetic she didn’t want to nap at all.  I really wanted to go for a walk, outdoors!  But I had to run a few errands so I was postponing a walk until today.  It was supposed to be warmer today anyways.  It was going to be perfect.  Even though I was out and about in the car, it didn’t stop me from enjoying the weather.  There I was, cruisin’with my shades on, a cracked window, and bustin’some AC/DC.  It made me even more excited for my walk today. Portobello, Red Pepper, & Goat Cheese Sanwiches

Grilled portobello, red pepper, and goat cheese sandwich, with leftover beet porscht soup, and a fresh garden salad.  The first time I made this I splurged and bought the foccacia bread.  This time I cheaped out and used regular bread.  It’s totally worth it getting the fancy bread.  The red peppers I used were from a jar, so it was really quick and easy to through this together.

BABY STEPS

Ellie and I did an eleven week course “baby time” in the fall.  The winter break was over and the classes were starting again, but she had graduated to the “walkers” group.  I was so excited for this to start.  It was a little earlier in the day which would work better for her potential nap.  The first day of class arrived and I was ready.  Or so I thought.  My excitement quickly turned to panic once we arrived in the parking lot.
