Meyer Lemon Chicken Piccata

Meyer lemon chicken piccata, mashed potatoes, green beans, and a garden salad.  This was really as quick as the recipe said it’d be.  This was definitely strong on the lemon flavor.  Next time it’d probably cut the lemon quantity in half.

Artichoke and Goat Cheese Strata

Artichoke and goat cheese strata, and a garden salad with strawberries and parmesan cheese.  I didn’t know what a strata was.  I only picked this because it’s cheap weak and I had most of the ingredients already.  It seems like a cross between stuffing and a quiche.  On the plus side, I finally got to use my herbes de provence.  I like artichokes and goat cheese, so this was a win win.

Vegetable Korma

Vegetable korma, rice, and a garden salad.  I picked this because it was in the budget cooking section and I wanted to be cheap this week.  This was pretty easy, but if you’re not a fan of cauliflower, you wouldn’t like this.  A little meat would have nice too.  If I did it again, I’d add chicken or beef.

Spaghetti Bolognese

Spaghetti bolognese and a garden salad.  As I was making this I kept thinking that it’d be a lot easier and quicker to just add some meat to a ready made spaghetti sauce.  But then I ate it and dang, this was totally worth the extra effort.  There’s nothing extra special about this, but I can’t put my fork down.

Pan Fried Chicken & Smoked Gouda Mac n Cheese

Pan fried chicken, smoked gouda mac and cheese, broccoli with red pepper flakes, and a garden salad.  The chicken didn’t look like that photo from the recipe, but it had great flavor.  The mac and cheese was awesome.  It says put it in the oven for 15 min, but I would do it for 10 instead.  I like broccoli as a side, but I never know what to do with it besides to steam it with a little butter and salt.  This was a good alternative to the standard.
